I really waited until the very last minute of this month to post these photos. Our challenge this month for the King Arthur Flour Bake Along was to make dark chocolate eclairs. This was a new experience for me. I had never made choux pastry before. It was lots of fun and we had yummy dark chocolate eclairs for a couple of days. I am sorry to say that they were eaten WAY TOO FAST!!! But now that I know how easy this was to make, I will definitely be making them again.
